Hi paul,
the issue is very clear, after I saw the install.log.
Your install folder is placed/unzipped wrongly. I assume the usb-stick looks like

<usb>/install_piratebox
<usb>/install_piratebox/install
<usb>/install_piratebox/install/cache

but it should be
<usb>/install
<usb>/install/cache

Check that the install folder containing the cache folder is directly located on the usb stick, like described above.
For this, power the box offline,
take the usb stick to your computer,
replace the install folder ,
put the usb stick back to your piratebox,
turn it on and wait.

Then the real installation starts.
