Okay I finally figured out I was just stupid.
If you directly unpack the install_piratebox.zip onto the stick the generated folder is named install_piratebox containing the install folder. Thus the installation does not work.
Now I was able to get the box running again by
1. Format USB Stick
2. place the image file and the install folder on the usb stick
3. do what is explained here
4. box works again
